A kitchen that respects the tradition, and isn't afraid to bend it.
Mihito started with a simple idea: keep the discipline of a Japanese kitchen, then let the flavours travel. That's how we get a sushi burrito on the same menu as chicken carbonara udon — both cooked with the same care.
Our chefs cut sashimi to order, roll each burrito by hand, and press teriyaki over open flame. Nothing pre-plated. Nothing rushed.
